ok I was too busy watching the superbowl to take a picture of the spaghetti and "meat" sauce but here is the recipe...
spaghetti and "meat sauce" adapted from the brackett's recipe
28 oz tomato puree 12 oz tomato sauce 12 oz vegetable stock 3 tbs essence pinch red pepper flakes 2 tsp italian seasoning 1 tsp parsley 1/2 c. red wine 1 tbs tomato paste 3/4 c. grated parmesan 1 bag morning star farms crumbles 1 box (6 patties) morning star farms sausage patties 8 cloves garlic (minced) 1/2 onion (chopped) salt pepper olive oil
in dutch oven, saute onion in olive oil after three minutes add garlic. cook for 2 minutes. add tomato paste and stir. add wine and reduce by half. add essence, vegetable stock, tomatoes, italian seasoning, red pepper flakes, salt and pepper. bring to boil then reduce to simmer.
allow to simmer at least 30 minutes.
when you start to heat the water for the pasta, put sausage patties in a skillet with a little water. cover with lid and allow to steam for a few minutes, just until they are no longer frozen. take out of the pan and crumble with a fork.
when the water is boiling and you add the pasta, put the crumbles and sausage in sauce and allow to heat through.
just before the spaghetti is done, add parmesan and parsley.
**this can be made with ground beef. use 1 pound for a less meaty sauce or two pounds for really meaty sauce. after the onions and garlic are cooked add the meat. proceed with the rest of the recipe the same. although i would substitute the vegetable stock for beef stock. when I used to make this with meat, i also added 1 tbs of sugar.
