1 lb fusili pasta (or your favorite shape)
1 pint grape tomatoes halved
1 ball fresh mozzarella cubed and put in the freezer for 5 minutes
olive oil
4 cloves garlic minced
1/4 c of pasta water
zest of 1 lemon
salt and pepper
cook pasta per directions on package.
heat olive oil and garlic until the garlic is fragrant. add tomatoes and cook until tomatoes just start to break down. season with salt and pepper. when done add cooked pasta with 1/4 c water. stir in lemon zest. take off heat and toss mozzarella. sprinkle with parmesan and serve.
