1 package of potato gnocchi (i used dececco)
1 pint grape tomatoes halved
10 small balls of mozzarella halved (put in freezer for 5 minutes)
4 cloves garlic minced
2 tbs olive oil
2 tbs butter
1/4 c dry white wine
1/4 c reserved water from cooking gnocchi
1/2 c parmesan
parsley
salt and pepper
red pepper flakes
1 lemon juiced and zested
heat olive oil and butter in large pan. add garlic and red pepper flakes and cook until fragrant. add wine and reduce by half. add tomatoes and cook until they just start to break down. add salt and pepper.
when gnocchi are done add them and 1/4 c cooking water to pan. cook for a couple minutes. stir in lemon juice and zest along with parmesan. take off heat and toss in mozzarella. sprinkle with parsley and serve.
