chunky peanut butter cookies


1/2 c. unsalted butter ( room temp)
1 c. chunky peanut butter
1 large egg
1/2 c. sugar
1/2 c. packed light brown sugar
1/2 tsp vanilla
3/4 tsp baking soda
1/4 tsp salt
1 3/4 c. all purpose flour

preheat oven to 350
sil-pats on baking sheet

cream butter and sugar. add peanut butter, cream more. add egg and vanilla, mix to combine.
in medium bowl, whisk flour, baking soda and salt. add to peanut butter mixture 1/3 at a time.

chill dough 15 minutes

roll into 1" balls and place on baking sheet. make traditional criss cross pattern by pushing down on ball. don't push too much...they should be thick.

bake 7 minutes.

these were good...good peanut flavor, but a bit to crumbly. i think next time i might add more butter...maybe a stick and a half.
really good tho, especially the next day (after being kept in tupperware).
