malted chocolate covered espresso bean cookies
adapted from gale gand's malted chocolate chip cookies
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 c (2 sticks) unsalted butter room temp
1 c brown sugar
1/2 c sugar
1 1/2 tsp vanilla
1 tbs espresso
2 lg eggs
1/2 c malt powder
1 1/2 c chocolate covered espresso beans chopped
preheat oven to 350
line baking sheet with silpat
in mixer, cream butter and sugar. add vanilla, eggs and espresso. mix to combine. add malt powder. mix
sift flour, baking soda and salt.
add flour mix to wet.
incorporate chocolate covered espresso bean into batter.
chill the batter for 15 minutes before scooping.
use a small ice cream scoop to portion the dough.
bake for 8 - 10 minutes.
cool on rack.
